Salty crown 
Makes 1 crown, Takes about 3 hr
Ingredients:
For the dough:
- 500 gr. of flour
- 50 gr. of butter/margarine (melted)
- 3 dl. of lukewarm water
- 1 tsp. of salt
- 20 gr. of yeast
- 80 gr. of Gruyère cheese (grated)
For the filling:
- 250 gr. of mushrooms (finely chopped)
- 1 onion (finely chopped)
- 1 bouquet of parsley (finely chopped)
- 1 bouquet of chives (finely chopped)
- 2 tbs. of butter/margarine
- 125 gr. of cream cheese
- Salt and pepper
For the glaze:
- 1 egg yoke
- 1 tbs. of milk
Preparation:
- Dissolve the yeast in the water. In a bowl mix the flour with the salt and
the cheese. Add the yeast mix and mix well until you have a consistent dough.
- Cover the bowl and let rise in a warm place until the dough doubles in volume
(about 1 hr).
- In the meantime, sauter the onion with the herbs in a greased frying pan.
Add the mushrooms and cook for 5 min. Put aside to cool down.
- Mix the milk and the cream cheese and mix with the mushroom mix. Season
with salt and pepper.
- Work the dough by forming two long rolls and flatten down in rectangles.
- Spread the filling on the rectangles and cover it up with the dough. Once
you have shaped two long rolls, wrap them around each other and form a crown.
- Place the crown on a baking sheet and glaze it with the egg and milk mixture.
Let rise about 20 min. while preheating the oven to 200ºC.
- Bake in the oven for 45 min. Serve warm.
Comments:
This is a delicious and original way to make bread. You can serve with a simple
vegetable dish and preheat it easily. However, it is not very easy to shape
the crown as the filling weakens the dough. Just be patient and if it doesn't
really look like a crown it will taste real good anyway!
